<p>Newly-opened Nomad is helmed by<strong> </strong>chef Lali Souto (formerly Matsudai Ramen, Poca, Nook), with service head Kim Barritt (ex-Penny &amp; Thomas) curating the drinks.&nbsp;It offers<strong> </strong>a “lux-modern canteen” serving monthly-changing seasonal small plates, hand-rolled pasta, chargrilled flatbreads, draught beers, fine wine, and creative cocktails.&nbsp;</p>

<p>Just opened last month at the newly redeveloped Theatr Clwyd, this light-filled bistro overlooking the Clwydian Range is where French technique meets seasonal Welsh ingredients for breakfast through to dinner. It has been created in partnership with Denbigh-born Michelin-starred chef Bryn Williams &#8211; celebrated for Odette’s (London), Porth Eirias (Colwyn Bay), The Cambrian (Swiss Alps), and the Touring Club (Cardiff). &nbsp;</p>

<p>Located on Swansea’s SA1 Waterfront, this is the returning-to-roots flagship of Jonathan Woolway, former Chef Director of London’s renowned St John group.&nbsp; Here the focus is on elevated British cooking with a nose-to-tail philosophy, so expect simple, robust dishes showcasing local seafood, meats and seasonal produce.&nbsp;&nbsp;</p>

<p>Once the quiet summer retreat of T.S. Eliot, this 19th-century country house has had a serene and stylish rebirth courtesy of the Thomas family &#8211; the hospitality brains behind <a href="https://yseler.co.uk/" target="_blank" rel="noreferrer noopener">Y Seler in Aberaeron</a>. Reopened in spring 2025, Tŷ Glyn now offers 13 calming bedrooms dressed in dreamy tones of cream, white and caramel, some with contemporary four-posters and garden views. Downstairs, the restaurant brings elegant British dining, while the landscaped gardens outside make this the kind of place where you’ll lose whole afternoons to fresh air and a second glass of wine.&nbsp;&nbsp;</p>
